OK so pineapples are about to be gone from my radar for the year but I decided to come up with one last recipe for a great salsa with fish tacos so here it is.. It also pairs well with pork, chicken and of course CORN CHIPS!!!
GRILLED PINEAPPLE SALSA-
- 1 large pineapple cored and cut into grillable slices
- 1 Roasted red pepper, diced
- 2 limes, zest and juice
- 1/2 serrano pepper, sliced thin and rinsed under cold water
- 1 shallot finely sliced
- half bunch of cilantro
- 1 1/2 T fish sauce
- 1T sugar
- 1T Honey
- splash of rice vinegar
- salt to your taste
- Grill pineapple on a grill-pan or outdoor grill until nicely colored, dice into medium chunks
- Toss with the rest of ingredients, adjust seasoning
