Thai Chicken Salad
1990 called and it wants its Chicken Salad back! It’s time to take chicken salad beyond apples and tarragon.  Do you even remember a time when something curried felt even the slightest bit exotic?  These deli staples are more tired than a Lindsay Lohan mugshot.  It’s time for a change!
You can bet your ass you’ve probably never tasted Chicken salad quite like this.  I threw together the greatest hits of thai flavors into a bold, fresh and flavorful mayo that will work on almost anything you would dress mayo with.  I Shredded the dark meat I had leftover from a chicken I roasted the night before, but any chicken will do!
THAI MAYO
6T Low-fat, Real Mayonaise, Hellman’s is fine
1t Tamarind Concentrate
3t Fresh Squeezed Lime Juice
1T Honey
1t Fish Sauce
1t Fresh Grated Ginger
1 1/4 t Dijon Mustard
1 Thai Chili, Stemmed, Seeded and sliced thin
1/4 Cup of Cilanto, chopped fine
3 T Fresh Mint, chopped fine
Pinch Of Salt
Whisk everything together in a medium bowl, let sit 10 minutes to fully combine all the flavors.
Lightly dress the shredded chicken and serve on toasted whole wheat bread
